Yirgacheffe, located in the Gedeb Zone of Southern Ethiopia, is one of the most
celebrated coffee regions in the world, known for its vibrant acidity, floral aromatics, and complex fruit notes.
The high elevation (1,900-2,100masl), rich volcanic soils, and ample rainfall create an ideal terroir for coffee cultivation.
Only ripe, red cherries are accepted at Gedeb. They are depulped the same day of delivery and fermented underwater for 36-48 hours depending on weather
conditions. After fermentation, the parchment is washed and carefully graded in washing channels. The coffee is then dried on raised African-style beds for 12-15 days, with regular turning to ensure even drying. This careful, traditional washed process results in a clean, expressive cup with the hallmark brightness and floral character Yirgacheffe is known for. Ethiopian Grade 2 designates high-quality washed coffee with exceptional cleanliness and distinct flavor clarity. Coffees are meticulously sorted by hand and machine to remove physical defects, ensuring consistent and refined final product.
This is a great reminder of why Ethiopia is the birth place of great specialty coffee.
